Lemon Seared Pork Chops

Ingredients

 

1 hr before cooking rub a good amount of cumin into pork chops. Use alot, the idea is to coat the chop in different spices to sear it. Pour 1 tablespoon of oil on chops and rub it in with the cumin. Then add sea salt, Fresh pepper, and a dash of essence. Do this to both sides. We want them both to be good. Chop should be covered in spices and oil. Let sit for 1 hr on plate in Fridge.

When ready to cook Heat Cast Iron skillet up on high & Preheat oven to 350. We will begin with the pot on the top burner then put it in the oven after searing. Make sure pan is very very hot before putting anything in it. Add the tablespoon of Olive Oil to the pan as it heats up. The oil shoild begin to smoke. When pan is extremely hot put chops on skillet. Should sizzle loudly. Leave on each side around 2 min. After spices on outside are browned, Fork the juice from two whole lemons into pan, it will steam real good!. Move chops around in lemon juice. Put entire pan in the oven for 5 min. Then turn on broiler. Leave chops in broil for a couple more minutes. Take out when cooked all the way through. Add a dash of essence when done and some salt. Garnish with parsley
